Tahini and Maple Activated Buckwheat Granola
This granola has a delicious flavour and the best crunch and texture! It is made healthier with the addition of buckwheat, which is a seed, not a grain and therefore carries a lot of nutrition. Buckwheat helps promote weight loss and adds healthy fibre to your breakfast.

Serves: 20 ( 3 heaped tablespoons) | Cook time: 60 minutes, plus 6 hours soaking time
Ingredients
2 Cups Buckwheat
1 Cup Rolled Oats
2 Tbsp Tahini
¼ Cup Maple Syrup
1 tsp Vanilla Extract
1 tsp Cinnamon
1 tsp Cardamom
¼ tsp Sea Salt
½ Cup Coconut Flakes
¼ Cup Sesame Seeds
Instructions
Soak Buckwheat with enough water to cover for 6 hours or overnight.
Drain, and rinse well.
Mix together the tahini, maple syrup, vanilla, spices and salt and pour over the buckwheat and add the oats. Mix well.
Heat oven to 150C and spread the buckwheat mix out on a large baking tray.
Bake for 20 minutes, stir and then bake 20 more minutes. Stir again and bake for another 10 minutes. Add the coconut flakes, sesame seeds and cook for 10 more minutes.
Allow to cool completely on the tray before storing in an airtight container.
NOTE: Adding one cup of plain yoghurt + 1 TBSP honey + 1/2 cup strawberries = additional 218 Kcalories
