Savoury Seeded Green Muffins

Make a batch of these muffins and freeze them for quick and easy breakfasts on the go. These muffins have a wonderful savoury flavour and packed full of healthy antioxidants, fibre and protein.

Ingredients

2 Medium Zucchini 

1/2 Cup (60g) Capsicum, Diced 

½ Cup Mixed Soft Herbs, such as Mint, Tarragon, Dill and/or Coriander 

Zest of 1 Lemon 

2 Eggs, Beaten* 

1 Onion, Chopped Finely 

150g (around 2 Cups) Baby Spinach 

1½ tsp Sea Salt  

1/2 tsp Cracked Black Pepper 

½ Cup (90g) Frozen Peas 

2 Tbsp Extra Virgin Olive Oil 

2 Tbsp Chia Seeds 

½ Cup (160g) Plain Greek or Non-Dairy Yogurt 

1 Cup (90g) Almond Meal or Flour 

1 Cup (130g) Buckwheat or Gluten Free Flour 

2 Tbsp Clean Protein Powder, such as Hemp or Pea 

2 tsp Baking Powder 

2 Tbsp Mixed Seeds, such as Poppy, Pepita and Sunflower

Instructions

  1. Place zucchini in food processor or blender and blitz until a green pulp is formed. Pour this into a tea towel and wring the moisture out. Set aside. 

2. Pan fry the onion for 10 minutes with a little oil on low until soft and translucent. Add the spinach to the pan and wilt slightly. Season with the salt and pepper. 

3. Place this mixture into a mixing bowl with the zucchini pulp, peas, capsicum, herbs and lemon zest. 

4. Add in the beaten eggs, chia seeds, oil and yogurt. Mix well and let sit for 5 minutes. 

5. Add in the flours and baking powder and fold together. 

6. Line a 6 or 12-hole muffin tray with muffin cases or baking paper, lightly oil and divide the batter equally. Sprinkle the seeds over the top. 

7. Bake for 25 - 30 minutes for standard muffins or 35 -40 for jumbo sized muffins, or until a toothpick comes out clean when inserted.  

8. Allow to cool slightly in the tray then loosen around the edges with a butter knife. 

NOTE:

* To make vegan, omit eggs, but soak the chia seeds in 1/3 cup water. Add this mixture in to replace the eggs. 

 To freeze, allow to cool then store in a sealed bag or container. To thaw, place in the microwave for 90 seconds.
