Dark Chocolate Coconut Brownie Protein Balls

ingredients

100g Walnuts

50g Pitted Prunes (around 10)

1 Tbsp Maple Syrup

1 tsp Vanilla Extract

1 Tbsp Clean Protein Powder

50g Desiccated Coconut (plus 1 Tbsp for rolling)

2 Tbsp Raw Cacao Powder (plus .5 tsp for rolling)

Pinch Salt

Instructions

  1. Soak prunes in boiling water for 1 minute then drain

2. Place walnuts in a food processor and process until the texture of course sand

3. Add the rest of the ingredients to the processor and work until the prunes have broken down and completely incorporated

4. Mix together the 1 Tbsp extra coconut with the 1/2 tsp cacao. Form mix into 24 little balls and roll through the chocolate coconut mix

Keep in the fridge or in a jar in a cool dark place. Keeps for 1 month
