Chocolate Chia Protein Pudding
The Romans used to eat chia seeds to keep them sustained all day. This is a healthy snack that can be enjoyed as breakfast, afternoon snack or guilt-free after dinner dessert.

ingredients
½ Cup Chia Seeds
2 Cups Non-Dairy Milk
¼ Cup Maple Syrup
1 tsp Vanilla Extract
¼ Cup Raw Cacao Powder
1 Tbsp Almond or Nut Butter
Pinch Salt
To Serve:
1 Tbsp Yogurt
1 tsp Chopped Almonds
4 Strawberries
INSTRUCTIONs
1. Place the chia seeds into a high speed blender and process for 30 seconds on high.
2. Add the rest of the ingredients and blend on high for another 1-2 minutes or until smooth and whipped.
3. Pour into 4 small glasses and place into the fridge for 2 hours to set and thicken
4. Top each glass with yogurt and chopped nuts and a strawberry.
Notes: Keeps for up to 5 days in the fridge.
